Deb's Cashew Stir-Fry
Thank you Deb! Your recipe was worth the wait.Greetings in the precious name of our Lord Jesus! I apologize for the delay in responding due to being out of town over the holidays. I just started my fast for the 2009 new year this week -- a 21-day fast -- 3 days total fasting with juice and water and the remaining 18 days on the Daniel fast.I had a good recipe for the Daniel fast which I wanted to share.
Cashew Stir-Fry
- 1 green pepper, sliced or diced
- 1 red pepper, sliced or diced
- 3-4 carrots, julienne style
- 3-4 celery stalks, chopped
- 1 can pineapple chunks
- 1 cup cashews
- 1 c. vegetable broth
Put all ingredients in a large frying pan and cook on medium heat stirring frequently. Serve over cooked brown rice.
Note: I prefer to add the cashews at the end of the cooking time right before serving so that they are still somewhat crunchy.
