Dee's Havana Beans and Brown Rice
serves 4, 20 minute preparation
IngredientsInstructions
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, seeded and chopped
- 2 tomatoes, chopped (or 1 can chopped tomatoes)
- 1/4 tsp. black pepper
- 2 cups canned black beans (not rinsed)
- cooking spray
- Spray a heavy pan with cooking spray
- Cook onion, garlic and pepper for about 3 minutes until starts to get soft
- Add tomatoes and black pepper
- Cook and stir for 5 minutes
- Add beans, cover and simmer for 20 minutes
- Serve with brown rice.
