Elaine's Sweet potatoes with black bean chile


  • Bake 4 medium sweet potatoes at 350F for 50-60 minutes
  • While potatoes are baking, heat olive oil in pan (not too hot), cook 1 chopped bell pepper for 3-5 minutes
  • Add 1 can black beans drained and 1 can diced tomatoes undrained, simmer 5-6 min
  • Split Potatoes and mash slightly
  • Top each potato with chili
  • Garnish with chopped fresh cilantro

This recipe and the last one had a lot of green/red peppers. Is it all right to avoid the pepper. I really don't like them!
