Marcy's Cactus Salad

Cactus Salad or "Ensalada de Nopal":
You can find ready to cook Cactus "Nopales" at your Grocer or Health food stores.
  • Dice cactus and rinse well. It will be gooey! 
  • Cook in skillet with enough water to cover cactus. 
  • Drain, rinse, and cool. 
  • Finely cut 1 bunch Cilantro, 2 Small Tomatoes and 1 Large Onion. 
  • Mix all ingredients together and spead on baked corn tortilla and eat as a "Chalupa". 
You can spead Pinto Beans on Corn Tortilla then add Cactus Salad. Or you can eat it as a wrap using Whole Wheat Tortilla by adding salad only, or adding beans and salad.
Any of these can be had with any picante salsa or diced fresh or canned Jalapenos.

Do you know if the corn torillas made of "Maseca" corn flour masa are Ok for Danie'l fast. Thank you!

Hi. Whole grain products are OK. Read the ingredients to see if they contain any of the Foods to avoid.
