Walter's Veggie Chili

Walter's Veggie Chili Daniel Fast Diet Recipe
Do this in a slow cooker or crockpot.
Saute 2 large onions chopped fine in olive oil
Then add together:
  • 1 whole red or yellow bell pepper chopped fine
  • 1 Jalapeno pepper seeded and chopped fine
  • 1 tablespoon minced garlic.
  • 1 tsp of salt
  • pepper and chili powder to taste
  • 2 cans diced tomatos with juice
  • 2 cans red kidney beans with juice
  • 2 cans pinto beans with juice
  • 2 cans black beans with juice

Cook 2.5 hours on high or low for 6 hours.

Theresa's Taco Soup

In a soup pot,
1 can black beans undrained
1 can great northern beans undrained
1 can kidney beans drained and rinsed
1 can refried beans
1 can of diced tomatoes
1 can of rotelli tomatoes
1 cup water
1 package of taco seasoning mix (you can also make your own)
Heat on low for 1 hour and enjoy with whole grain organic corn chips. Even
the kids will enjoy.

Marcy's Cactus Salad

Cactus Salad or "Ensalada de Nopal":
You can find ready to cook Cactus "Nopales" at your Grocer or Health food stores.
  • Dice cactus and rinse well. It will be gooey! 
  • Cook in skillet with enough water to cover cactus. 
  • Drain, rinse, and cool. 
  • Finely cut 1 bunch Cilantro, 2 Small Tomatoes and 1 Large Onion. 
  • Mix all ingredients together and spead on baked corn tortilla and eat as a "Chalupa". 
You can spead Pinto Beans on Corn Tortilla then add Cactus Salad. Or you can eat it as a wrap using Whole Wheat Tortilla by adding salad only, or adding beans and salad.
Any of these can be had with any picante salsa or diced fresh or canned Jalapenos.
